Gran’s Custard Biscuits

We were given the recipe for these soft 'melt in your mouth' biscuits from our grandmother and grew up eating them in the morning with tea. Our custard biscuits are similar to a shortbread texture. We flavour our shortbread dough with custard powder, cut into rounds and bake until crisp. To make them a little more indulgent we then sandwich the biscuits together with buttery custard icing.
